Spinach is probably one of my favorite leafy greens. I use it for just about everything – smoothies, soups, salads…it’s so good! Since I love it so much, why did it make me so long to discover spinach chips?
There are so many ways to flavor this recipe, but my current favorite is simply olive oil and a bit of salt. The natural sweetness of the spinach comes through so well, but if you decide it needs a little more oomph, then feel free to season with your faves (I might try jerk seasoning one of these days).
2 handfuls of baby spinach
1 tbsp olive oil
Salt to taste
In a bowl, gently toss the spinach and olive oil until the leaves are coated. Spread out on a baking sheet lined with parchment paper in one layer (use more pans, if necessary). Sprinkle with salt, pepper and garlic powder if desired. Bake in a 350 degree oven for 10 minutes. Remove the pan from the oven and let cool.
