Bruschetta and Lentil Dip

Lentil Bruschetta DipBefore summer comes to a close, please do yourself a favor and make plans to enjoy the weather outdoors this weekend. Pack a blanket and some chairs. Fill your cooler with ice cold lemonade. Go to Trader Joe’s.  Buy these ingredients. And make this recipe, too.

I was first introduced to this delicious lentil dip several years ago before I became a vegetarian and it quickly became my go-to potluck contribution. It is seriously the easiest thing to make – there’s absolutely no cooking involved and no chopping. Are you ready?

Bruschetta and Lentil Dip

Adapted from My Favorite Things

Ingredients

  • 1 package steamed lentils
  • 1 container bruschetta sauce, drained
  • 1 container crumbled feta cheese
  • Crackers (I love using water crackers or pita crackers)

Directions

In a large bowl, break up lentils using the back of a large spoon (this will keep the lentils whole). Next, mix in bruschetta sauce, and feta. Serve with crackers or sliced cucumber.
