Spinach Artichoke Dip

This spin on spinach artichoke dip is a hearty, hummus-inspired party favorite!

Ingredients
- 1 cup white beans rinsed and drained
- ½ cup raw, unsalted cashews soaked for at least 4 hours
- 1 tbsp lemon juice
- 3 tbsp nutritional yeast
- 1 onion chopped
- 4 cups fresh spinach
- 2 cloves garlic minced
- 1 14 oz can artichoke hearts drained and roughly chopped
- salt
- pepper
- red pepper flakes
Directions
Rinse and drain the white beans and place them in a blender or food processor with the cashews, lemon juice, and nutritional yeast. Blend until smooth. Set aside.
In a large pan, heat some oil and sauté the onion until they become translucent. Add garlic and saute for 2 minutes. Add the spinach and cook for 3 minutes. Season with salt and pepper. Add the artichokes and stir in the white bean cashew mixture.
Season with salt, pepper, and if using red pepper flakes. Serve with pita chips, crackers or toasted baguette.
