Made mostly with pantry ingredients, this dip is a hearty appetizer made with white beans and cashews, and packed with flavor! You can serve it with crusty bread or crispy pita chips – it’s the perfect appetizer for your next get-together or game night!

 

If you’ve never used cashews to create creamy dips, then this will be a fun recipe for you! It might seem strange, but raw cashews are often used to make vegan cheese, puddings, and other creamy dishes. There are a couple ways to prep the cashews – the goal with either method is for the cashews to be soft for easier blending. The softer the cashew, the creamier (and less chunky) the mixture will be.

  1. You can soak them for at least four hours. If you have time, go ahead and soak them overnight!
  2. You can boil cashews for 5-10 minutes until they soften.

  • 1 cup white beans rinsed and drained
  • ½ cup raw, unsalted cashews soaked for at least 4 hours
  • 1 tbsp lemon juice
  • 3 tbsp nutritional yeast
  • 1 onion chopped
  • 4 cups fresh spinach
  • 2 cloves garlic minced
  • 1 14 oz can artichoke hearts drained and roughly chopped
  • salt
  • pepper
  • red pepper flakes

Directions

  • Rinse and drain the white beans and place them in a blender or food processor with the cashews, lemon juice, and nutritional yeast. Blend until smooth. Set aside.
  • In a large pan, heat some oil and sauté the onion until they become translucent. Add garlic and saute for 2 minutes. Add the spinach and cook for 3 minutes. Season with salt and pepper. Add the artichokes and stir in the white bean cashew mixture.
  • Season with salt, pepper, and if using red pepper flakes. Serve with pita chips, crackers or toasted baguette.
