Pumpkin Spice Latte

You know it’s fall when your wardrobe shifts from flip flops to boots, tank tops to sweaters. Another telltale sign the season has changed: pumpkin spice lattes. But did you know that the popular PSL at some U.S. chain coffee shops isn’t vegan?

 

(Also, did you know it actually contains pumpkin? I always thought it was a latte + pumpkin pie spices, but after debating this in my head, it is – in fact – called a pumpkin spice latte, not a pumpkin pie spice or spiced latte. So I guess it would have both pumpkin and spices. Sorry for the detour. Moving along…)

 

Well, guess what, party people? This great recipe from PETA contains pumpkin AND pumpkin pie spice AND it’s vegan.  It is easy to make for yourself and can easily be multiplied to make enough for a crowd. Even better, you can customize the recipe in so many ways. Using the milk and creamer of your choice, you can create a drink that fits your preferences. You can also sub out the agave nectar with a sweetener of your choice, and if you want to be festive, you can add a little whiskey to your mug, too (because whiskey soy lattes are my fave).

Pumpkin Spice Latte

This coffeehouse favorite is sure to warm up a Fall morning.

Ingredients
  

  • 1 1/2 cups non-dairy milk
  • 2 tbsp non-dairy creamer
  • 2 tbsp canned pumpkin
  • 1 tbsp agave nectar
  • 2 tsp vanilla extract
  • 1/2 tsp pumpkin pie spice plus more for garnish
  • 1 serving instant coffee granule

Instructions
 

  • In a saucepan, stir together the nondairy milk, creamer, and canned pumpkin and warm over medium heat until the mixture begins to steam.
  • Reduce the heat and bring to a simmer. Whisk in the agave nectar, vanilla extract, pumpkin pie spice, and instant coffee.
  • Pour into a mug and enjoy.

Notes

If you don't have pumpkin spice, then you can always make your own by mixing:
  • 4 tsp ground cinnamon
  • 2 tsp ground ginger
  • 1 tsp ground cloves
  • 1/2 tsp ground nutmeg
Store in an airtight container in a cool, dry place for up to 6 months.
