Sausage Rolls

If you know me, then you know the only sport I watch involves ice rinks and hockey sticks. However, if you reeeeeally know me, then you know that themed menus are my JAM and I am always down to cook. In past years, since I worked for a catering company, Super Bowl Sunday was always a busy day for our team and one in which I never got to watch the game (and more importantly, the half-time show).

 

Those event menus were always some of my favorite to create: I’m talking sliders, mini subs, chips and guac, freshly popped popcorn – if it was handheld and easy to eat, then we made it!

 

Last year (thanks to COVID and the sad state of the event industry at the time), I actually got to cook for the first time and decided to make a football-themed snack spread – it was a ton of fun to make and even more fun to eat! We had all the store-bought basics covered. Pretzels, chips and popcorn served in these football treat boxes. Fudgy football-shaped brownies. And the star of our Super Spread: sausage rolls!

 It was my first time making this recipe, and I have to say, these were so simple to make that I try to keep my freezer stocked with these ingredients for those late-night food emergencies (you know what I’m talking about). I was actually surprised at how easy it was to find puff pastry dough that’s made without butter (I used Pepperidge Farm, but just make sure you read the ingredient list).

 

You can dress these up however you’d like – my go-to is a good helping of curry ketchup, but your favorite ketchup/mustard combo is perfect here, too!

Sausage Rolls

These sausage rolls are so easy to make and only take a few ingredients. Make it for your next game day or get together!

Ingredients
  

  • 4 links Beyond Sausage Brats
  • 2 packages puff pastry, thawed
  • vegan egg wash
  • 1/2 cup ketchup
  • 2 tsp curry powder
  • mustard

Instructions
 

  • Preheat oven to 375 degrees.
  • On a cutting board, slice Beyond Sausage links in half (lengthwise) and then in half again (widthwise). Set aside.
  • Next, carefully unfold the puff pastry. Slice each pack of puff pastry into eight equal squares, approximately the width of each quartered sausage piece.
  • Wrap each sliced Beyond Sausage piece in a puff pastry and place on a lined baking sheet. With a pastry brush, coat roll-ups with egg wash and bake for 12-15 minutes or until golden brown.
  • While the sausage rolls bake, make the curry ketchup by mixing the ketchup and curry powder.
  • Once sausage rolls are baked, you can pipe curry ketchup and mustard onto each roll or serve as a dip.
