Bruschetta and Lentil Dip
Before summer comes to a close, please do yourself a favor and make plans to enjoy the weather outdoors this weekend. Pack a blanket and some chairs. Fill your cooler with ice cold lemonade. Go to Trader Joe’s. Buy these ingredients. And make this recipe, too.
I was first introduced to this delicious lentil dip several years ago before I became a vegetarian and it quickly became my go-to potluck contribution. Lentils were a new ingredient for me – I didn’t have any experience cooking with it, so when I found out that all of these ingredients were ready-to-eat off the shelf, there was no question that I could make this.
It is seriously the easiest thing to make – there’s absolutely no cooking involved and limited chopping. Are you ready?
If you are buying these items at Trader Joe’s, then you’ll need to shop the refrigerated section to find the steamed lentils and bruschetta sauce. If you prefer to make your own, then you’ll need If you have time, you could also make your own lentils and sauce!

Bruschetta and Lentil Dip
Ingredients
- 9 oz package steamed lentils approx 1 1/2 cups
- 14.5 oz container bruschetta sauce drained, approx 1/2 cup
- 1/4 cup fresh basil chopped
- 8 oz package vegan feta cheese optional, approx 1/2 cup crumbled
- Crackers or Sliced Cucumber
Instructions
- In a large bowl, break up lentils using the back of a large spoon (this will keep the lentils whole).
- Mix in bruschetta sauce, feta and basil until combined.
